How to choose Kombu

Unlike many other vegetables, it is extremely difficult to assess the quality of dried kombu from looks only. It should be a dark color, brittle in the hands, but other than that, until you actually use the kombu, it is hard to asses the quality.

For dried kombu, traditionally the north of Japan (Hokkaido and surrounds) has been the world's kombu garden. Recently, more and more commercially grown kombu has come from northern China. So what is the difference between these two?

While the kombu from China uses Japanese seed stock, it is cultivated, whereas the kombu from Japan is natural growth. Japanese kombu never naturally grew in the areas of China it is currently harvested from.

Kombu takes on the flavors of the marine environment within which it is grown. Slightly differing variations of nitrogen, calcium, and other essential elements will affect the end flavor of the kombu.

Matsumaeya only ever uses natural growth, second year ma-kombu (true kombu), whereas a lot of cultivated kombu is first year growth, which does not have the concentration of umami producing glutamates that ma-kombu has.
